One month feels like a manageable window to take action toward a life with less plastic. Plastic Free July encourages the refusal of single-use plastics through simple, accessible changes. We're drawn to plastic-free swaps that feel easily attainable—with a list of ideas to do so from the Australian coalition behind the global initiative.

We're inspired by chef Skye Gyngell's Scratch menu at Spring in London—a three-course offering that transforms surplus ingredients into thoughtful dishes, all for £40. It's a compelling approach to reducing kitchen waste in a country (the UK) where 40% of fruit and vegetables are discarded before reaching shelves due to imperfections. (Similar figures are present in the US.) Beet tops and potato skins become an inventive soup, veg cuttings are pickled, and yesterday's bread becomes warm bread pudding.
