Avocado Oil Decoded: A Guide to Extra Virgin vs Pure

Our two organic oils, Extra Virgin Avocado Oil and Pure Avocado Oil, unlike 70% of avocado oils on market, are 100% pure. Both oils are carbon-neutral and free of exposure to synthetic chemicals (such as glyphosate), chemical fertilizers, and unnatural refining agents. Avocado oil, whether extra virgin or pure, is rich in monounsaturated fats; enhances the absorption of fat-soluble vitamin A, D, E, and K; contains natural antioxidants such as lutein and phytosterols; and is naturally anti-inflammatory.

Each oil has its purpose in the kitchen, which is why we prefer to keep both at hand. The two are different in application (finishing vs high heat) and flavor (bold vs neutral). Below we break down the core differences between EV(A)O and Pure.

Extra Virgin

The term "extra virgin" refers to the unrefined state of the oil, reflective in color, density, and taste. Extra virgin oil is cold pressed, meaning it's extracted without the use of heat. Through this process, the oil retains the most flavor and more antioxidants, but is rendered less versatile for cooking with heat. Our Extra Virgin Avocado Oil preserves the flavor of its origin: mild, nutty, and verdant. Extra virgin is meant to enjoy simply, as a finishing oil: a salad dressing base, drizzled over greens, roasted vegetables, toast, yogurt, ice cream, wood-fired pizza, and baked goods. Or served at the table for dipping bread and crudité.

Pure

Pure Avocado Oil is extracted for high-heat cooking, with one of the highest smoke points exceeding 500º F. It's ideal for high heat charring, sautéing, roasting, searing, and baking with a 1:1 substitute for butter. Our Pure Avocado Oil is refined without the use of unnatural agents and is 100% pure (a rare quality for refined avocado oil). It has a similar consistency and neutral flavor to mimic the creamy richness of butter, and many bakers prefer to swap butter or seed oils for pure avocado oil.
