Savory Melon Salad
with pecorino

Sometime less is more - an opportunity to highlight and honor the best, in season ingredients you can get your hands on. We love the contrast of serving a cold, sweet and salty fruit dish to start (or to end) a intimate gathering with friends and family. Enter: the savory melon salad with pecorino. Ripe juicy melon, salty sheep's milk cheese and a generous drizzle of rich Organic Extra Virgin Avocado Oil.
Ingredients:
1 Melon
4 tbsp Organic Extra Virgin Avocado Oil
2 tbsp chardonnay vinegar
Pecorino (fiore de sardo), ricotta salata, or other hard, salty cheese
Flaky Salt and Pepper
Instructions:

Take your melon and cut it into 1” slices long ways.

Gently slice off the rind (you can pickle or compost it). Lay the melon slices along your plate.

Top all the melon slices with flakey salt, fresh cracker pepper, vinegar and a healthy drizzle of Extra Virgin Avocado Oil and fresh shavings of cheese. Let the dish sit for a few minutes to meld the flavors and enjoy!
