Summer Heirloom Tomato Salad
A simple tomato salad with stone fruit, tarragon flowers and our Extra Virgin Avocado Oil.

With warm temperatures continuing, we're savoring the last of the garden grown vegetables and sunny afternoons. Brighten up a simple tomato salad with stone fruit, tarragon flowers and our Extra Virgin Avocado Oil.
Ingredients ~
5 Heirloom Tomatoes in a variety of colors
2 Nectarines
3 tablespoons west-bourne Extra Virgin Avocado Oil
I clove garlic finely chopped
3 tablespoons lemon juice
1/2 cup chopped fresh basil leaves
Flake salt and pepper, to taste
Tarragon flowers for garnish and serving
To Make ~
Slice the stone fruit and tomatoes into thin wedges and arrange on a plate with chopped basil leaves.
To Finish ~
On a plate, combine the sliced tomatoes and fruits, drizzle with avocado oil and lemon juice, and season with salt and pepper to taste. Sprinkle a pink of tarragon flowers to brighten up the salad.
Serve at room temperature.
